I got this recipe from a Pampered Chef party so all of the recipes are technically made to be used with the Pampered Chef Manual Food Processor (you can use any kind of food processor- they all work the same as far as I can tell). They have tons of different recipes that are accidentally vegan friendly! The recipe below has been adapted from the Black Bean Salsa recipe they have with a few minor changes.
- 2 Medium Tomatoes, with the guts rinsed out
- 1/4 cup green onions
- 2 tablespoons fresh cilantro, snipped
- Juice of 1/2 a lime
- 1 can black beans, rinsed
- 1 pinch of salt
- 1 pinch of pepper
Cut the tomatoes into small pieces and rinse out the guts, put the pieces into the food processor and chop until the pieces have broken down, but there are still nice chunks there. Empty food processor into medium-sized bowl. Put the chopped onions, and cilantro into the food processor, chop and empty into bowl with tomatoes. Squeeze the 1/2 lime into the bowl as well and add the salt and pepper. Mix everything together, cover, and let marinate in the refrigerator for 1-2 hours. Serve with tortilla chips and enjoy with family and friends!
Note: I found that Tortilla brand chips does have dairy free options you just have to read the labels carefully because some flavors do contain milk products. We went with Restaurant Style and were fine!
