This scramble will have even the most skeptical of omnivores asking for seconds!  You can pretty much have free range as far as the veggies go- I have even tried adding some stir fry ingredients from past meals in with the mix.  This time I finished it off with a side of salsa, Toffuti Sour Cream, and Daiya Dairy-Free Cheddar Cheese!  Explore and experiment!


  • 1 container organic firm tofu, crumbled
  • 1 cup uncooked spinach
  • 1 cup uncooked mushrooms
  • 1 yellow onion, diced
  • 2 cloves garlic
  • 1 green pepper
  • 1 avocado, diced
  • 1 tbsp paprika
  • salt and pepper to taste

Directions:  Heat a large frying pan on high until hot to ensure that the onion will excrete its juices and you won’t have to use oil (you can always put some water in the pan if you need some).  Add in garlic and steam until onion is soft. Add all remaining veggies (except avocado) and steam over medium heat for about 4-5 minutes.  Add crumbled tofu, avocado, paprika, salt and pepper and stir combining all ingredients together.  Leave on heat for another 3 minutes or so and serve with condiments!  It’s really that easy.  And one of the best parts is that you don’t have to worry about cooking the tofu for a certain amount of time- it’s ready when you are!  Enjoy with family and friends!
