Part of my making-a-huge-batch-of-quinoa-that-will-last-me-all-week initiative, I concocted a delicious tomato saucy version that’s simple and tasty enough to have for the 7 or so upcoming days as a snack, or even some meals.
- 3 cups dried quinoa, cooked
- 1/2 yellow onion
- 1 can organic tomato sauce (the less that’s in it in the way of sodium- the better)
- 1 tbsp paprika
- 1 tsp red pepper flakes
Directions: Cook quinoa. In a separate pan, steam the onion in some water and add the paprika and red pepper flakes. When onions are soft, add in tomato sauce and simmer on medium heat for 10 minutes until flavors have melded. Add the sauce into the quinoa and continue to cook covered over low heat for 15 minutes. Yes folks, this one’s really that simple. Enjoy with family and friends!
