I recommend making this with the Hot Steamed Veggies for a plate full of green goodness.

Ingredients:

  • 2 cups raw quinoa
  • 1/2 cup fresh cilantro, chopped
  • 1 lemon
  • 1 tsp salt (or to taste)
  • 1 tsp pepper (or to taste)

Directions:  Bring  4 cups water and 2 cups quinoa to a boil.  Cook covered on low heat for about 15 minutes (or until water is completely absorbed) being sure to stir often.  When quinoa is done to your liking, add cilantro and lemon juice.  Serve warm or cold.
