I like to make a big batch of quinoa whenever I make it.  It’s a great dinner as well as a cold lunch or even a satisfying snack.


  • 2 cups raw quinoa
  • 2 tomatoes
  • 2 cloves garlic
  • 1 tbsp basil
  • i tbsp garlic powder
  • 1 tsp red chili pepper flakes
  • 1 tsp salt (or to taste)
  • 1 tsp pepper (or to taste)

Directions:  Bring  4 cups water and 2 cups quinoa to a boil.  Cook covered on low heat for about 15 minutes (or until water is completely absorbed) being sure to stir often.  In a seperate pan, using a bit of cooking spray, simmer chopped garlic cloves.  In food processor, chop tomatoes to a chunky sauce and add to garlic in pan.  Add spices and cook salsa mixture over medium heat for 5 minutes.  When quinoa is done to your liking, add sauce and mix together.  Serve warm or cold.
