When I’m looking for the simple answer to “what are we going to have for dinner tonight?” I often try to incorporate a grain, a bean, and a sauce.  For this meal in particular, I chose quinoa and brown rice (I cook them together with a 1:2 grain to water ratio) Black beans simmered over low heat for 20 minutes with 1 tbsp chili powder and my now famous mango sauce (see below).  You won’t be sorry and what’s better- the ingredients are whole and hardly anything goes in!


  • 2 mangos, peeled, pitted and pureed
  • 1 large tomato, pureed
  • 1/4 cup cilantro, finely chopped
  • 3 cloves roasted garlic

Directions: Put all of the ingredients into a pan and simmer together for 10 minutes until blended and hot.  Serve over your beans and grains for a complete meal OR over pasta and veggies OR (really, the possibilities are endless for this sauce).  I found that the tomato tones down the sweet flavor of the mango but not too much so overall, if you’re looking for a sweeter flavor over spicy or salty, this is the way to go.  Enjoy with family and friends!
