The veggies still had a tiny crunch to them and all the green on our plates made us so happy!

  • 1 medium onion, sliced
  • 1 eggplant, chopped
  • 1 cucumber chopped
  • 1 cup mushrooms, sliced
  • 2 tsp chili powder
  • salt and pepper to taste

Directions: Cover the bottom of whatever pan you’re using with about 1 cm of water and bring to a boil.  Add veggies, chili powder, salt, and pepper- quickly stir and cover for 2 minutes.  Remove cover  and cook 2 more minutes while stirring to be sure that your veggies don’t get too soft for your liking (by this time the water should be running pretty low). Remove from heat and serve hot with Lemon Cilantro Quinoa for a delicious pairing of flavors.  Enjoy with family and friends!
