This recipe was adapted from Oh She Glows which has proven to be a very inspirational source for me.  Some advice that I would give after having made the icing would be PATIENCE!  I doubled her original recipe and played around with the mix as I went until I was happy with the outcome.  Even if you think you have added enough (or even too much) powdered sugar, still add at least what the recipe calls for- you won’t be sorry later and your frosting will stay fluffy instead of on the thinner side. 

Ingredients:

  • 1 cup Earth Balance buttery stick (I heated mine up in the microwave for just 15 seconds to soften)
  • 6 cups powdered sugar (organic brands can be found at your health food store)
  • 2 tsp pure almond extract
  • 4 tbsp non-dairy milk (just add slowly so you get the consistency you want)

Directions:  In a mixing bowl, beat the Earth Balance with an electric mixer.  Add in the milk and the extract.  Now gradually add the powdered sugar slowly (I didn’t sift the sugar at all so the entire process took about 10 minutes of continuous mixing).  I found that the icing was perfect right after beating and stiffens back up a bit in the fridge.  If you can frost your cake right after you make the frosting that would be ideal- then you can just pop the whole thing  in the fridge if it’s future use.  Enjoy with (a cake and) family and friends!
