This recipe was adapted from Yummly and I followed it pretty much to the T except that I used cane sugar and I didn’t add any salt.  The main reason that I went with this recipe over others that I had seen was that I only had to pick up the bananas- everything else I already had!  I cut the bread up and put some in my purse (in a little baggies of course) for snacks for the rest of my week.  It really was great.


  • 4 bananas, over ripe
  • 2/3 cup cane sugar
  • 4 tbsp water
  • 1 tsp vanilla extract
  • 2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 cup of walnuts, and some extra for the top

Directions:  Preheat the oven to 350 and grease (I used Earth Balance Vegan Butter) an 8×4 loaf pan.  Mash the bananas with a fork in a large bowl.  Add sugar, vanilla, and water and mix well.  In a medium bowl mix the flour and baking powder together.  Pour the flour mixture into the bananas, mix well (I used an electric mixer for this).  Also, expect the batter to be a little on the thicker side.  Mix in walnuts by hand.  Pour into the prepared loaf pan smoothing out the top- sprinkle on remaining walnuts for garnish.  Bake for 50-55 minutes or until a toothpick inserted into the bread comes out clean.  Let cool completely before slicing.  Enjoy with family and friends!
