We were in the mood for burritos but we couldn’t find a suitable meatless option in any of the cookbooks that I had on-hand. Naturally, I turned to the internet. I found this great recipe that turned out to be pretty cheap and it made a TON of food. 3 burritos the first night and enough for at least 6 more. The recipe you will find below has been adapted from Karma Chow.
Ingredients:
- 1 Red Bell Pepper, chopped
- 1 Yellow Bell Pepper, chopped
- 1 Yellow Onion, thinly slice
- 1 Zuccini, chopped
- 1 Can Organic Black Beans
- 1 Can Fire Roasted Diced Tomatoes
- 1 Cup Brown Rice, cooked
- 1 Pkg tortillas (I got the tortillas from Trader Joe’s (and although they weren’t gluten-free) I was pleased to see that they were also dairy free!
The recipe originally called for Chili Power and Cumin…I admittedly forgot to add them both, I also didn’t see a need for the salt or pepper- there was plenty of flavor already- no one missed it!
Directions: Prepare the rice as directed. Add enough water to cover the bottom of your cooking skillet. Add peppers, onions, and zuccini- steam until soft. Add tomatoes and stir to mix. Lower the heat and cover cooking for about 5 more minutes. Add black beans and then remove from heat letting stand to cool.
To Assemble: Microwave tortilla for 20 seconds until soft. Add a hearty scoop of the pepper/tomato mixture into the center of the tortilla followed by a nice scoop of the rice. (You can add tasty non-dairy treats in at this point (non-dairy cheese or non-dairy sour cream works nicely). Fold the tortilla over the stuffing, tuck in both ends and roll on!
I used a few pieces of spinach as garnish but that was mostly for the burrito photo-op! Enjoy with family and friends!
